Plant Based Sancocho
Sancocho is one of my favorite dishes, fueled with vitamins and nutrients essential for our Immune system. It’s filing, tasty and an easy way to sneak in more vegetables into our nutrition. Since it always makes enough for leftover, its a delicious meal that can prepared and frozen for up to 4 weeks, It’s always a life saver for days I don’t want to cook and 100% Plant-Based.
Sancocho is a traditional dish from my motherland country Dominican Republic, and one of my favorite dishes grown up. My mom prepared it on rainy days, cold days and snow days, and I could eat sometimes up to 3 plates. My mom always makes 2 pots of Sancocho, one with poultry for my dad and me since I stopped eating red meat when I was 15, and another with beef for everyone else.
After going plant-based in 2019, I made it my business to make the plant-based version, without meat and all it took was removing the meat to master it with the same great test.

INGREDIENTS
3 Large Carrots
4 Potatoes (Yukon or Idaho)
1 Green Pepper
1 Large Yellow Onion
4 Celery Stalks
3 Plantains
1/2 Malanga
1/2 Buttercup Squash
2 Tbsp Vegan Bouillon
1/2 Cilantro bunch
3 Corn Cobs
3 Tbsp Minced Garlic
1 Avocado
Spices for Seasoning:
2 Tbsp Garlic Powder
2 Tbsp Onion Powder
1 Tbsp Oregano
1/2 Seasoned Salt
1/2 Celery Salt
1/4 Tsp Paprika
1/4 Tsp
1/4 Tsp Black Pepper
Don’t forget the Secret Ingredient: Add Love!
RECIPE
Step 1: Wash your vegetables (2 Carrots, Potatoes, Green Peppers, Yellow Onion, Celery Stalks, Plantains, Buttercup Squash, Cilantro, Corn and Garlic) in water, clean, peel and chop, adding them to a large pot with water.
Step 2: Cover, bringing water and vegetables to a boil until soft and tender.
Step 3: In a blender, add 2 Carrots, Green Peppers, Yellow Onion, Celery Stalks, 1/2 Plantain, Buttercup Squash, Cilantro and pour it back into the large pot. This will give the soup a thick texture.
Step 4: Add your spice seasonings, add the Malanga & 3rd carrot, diced diagonally and continue stirring for 30 minutes.
Step 5: Serve + Enjoy either alone or with white rice and avocado slices. For my spicy lovers, Tabasco to spike up the heat and flavor!
